Pumpkin Muffins

This time of year is my favorite time. All of the beautiful colors, cool weather, and PUMPKIN! I love any kind of dessert with pumpkin and I adore these pumpkin muffins. I think you will, too! 






Pumpkin Muffins

1 1/2 cups sugar
3 eggs
3/4 cup oil
1 can pumpkin
1 tsp. vanilla extract
1/2 tsp. nutmeg
2 T. cinnamon 
1/4 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
3 cups flour

Mix all ingredients in order with a mixer. Careful not to over mix. Ladle mixture into sprayed muffin tins. You can top with chocolate chips, pecans, or raisins.. whatever you like. I didn't put any of those in mine. A streusel might be nice.
Bake 350 for 13-15 minutes or til toothpick comes out clean.  I put a cinnamon-sugar mixture onto some of these, as you can see in the picture.

Grandmom's Short Bread

Grandmom's short bread recipe has become my favorite treat.. It's so buttery, delicious, and easy to make!

Mix together ingredients as instructed by recipe. 


Pat into a pie dish or tart pan.


Bake at 325 degrees for 30-35 minutes until golden. 


It's the best while it's still warm! :) yum... enjoy!!



SHORTBREAD

Makes 12 servings

Bake: at 325 deg for 35 minutes.

1/2  cup (1 stick) unsalted butter, at room temperature
1/2 teaspoon vanilla
1/8 teaspoon salt
1/2 cup confectioner's sugar
2 tablespoons cornstarch
1 cup all-purpose flour

Preheat oven to 325. Grease 9 inch tart pan, or pie dish.
Beat butter, vanilla, and salt until creamy. Beat in sugar and cornstarch. Beat in flour until blended but still crumbly. Scrape into prepared pan. Pat out level with hands. Prick top with fork.
Bake in preheated 325 deg oven 35 minutes.

Lime Cupcakes

I just so happened to have a few limes laying around, and since I've been on a cupcake frenzy I decided to search for a lime cupcake recipe. I got this recipe from the Piece of Cake blog where I often find lots of yummy inspiration. It was my favorite find, and the most delicious!

I made the frosting with semi-sweet chocolate chips instead of white chocolate chips. I only put it on a few of the cupcakes, as the cupcakes themselves were absolutely delicious!!
